Come to Mount Pleasant Winery on Sunday, September 8 for a behind-the-scenes look at Missouri's only Conservation Wine — Bethlehem Valley. Magnificent Missouri will be on hand to taste Dan and Connie Burkhardt's award-winning Norton as well as the highly sought after Chardonel. Bethlehem Valley Wine is produced on-site, by none other than Chuck Dressel of Mount Pleasant Winery. At 2:30, Chuck will lead us through the winemaking process and have us taste, right out of the barrel, this year’s crop at a very distinctive time, MUST.
In the process of winemaking there is a step called "must," meaning "young wine". It is a time when the freshly crushed grapes still contain the skins, seeds, and stems of the fruit. Making must is the first step in winemaking. When winemaker Chuck Dressel judges the time to be right, the juice is drained off and is then pressed to extract the juice retained by the matrix. Yeast is added to the juice to begin the fermentation, and we will test it at a very unique time in the process.
